The Rustic presents Stars Stripes and Summer Nights

7/29 at 4:00 p.m.

The Rustic will present an afternoon of live music and everyone’s favorite summer indulgences, all while supporting Folds of Honor. Standout local blues and soul powerhouse Abraham Alexander will kick off the event with live music. Luke Pell, U.S. Army Captain turned country music heartthrob after starring on The Bachelorette, will take the stage next. Catch Pell performing his chart-topping hit, “Ball Caps” and “Blue Jeans.” The live music doesn’t stop there. One of Texas country’s finest, Wade Bowen, will cap off the night with a high energy, full band performance, and with Bowen, you never know who might join him on stage. One hundred percent of the proceeds from ticket sales and a percentage of the proceeds from the vendors will benefit Folds of Honor, an organization that provides educational scholarships to spouses and children of America’s fallen and disabled service members. Kent Rathbun Opens Imoto in Victory Park

While it may be crowded on game nights and during concerts, Victory Park is one of Dallas’s less-frequented neighborhoods. Although the district houses the American Airlines Center, a WFAA news station, and Happiest Hour bar, the action in Victory Park is relatively low compared to that of Dallas’s other neighborhoods. A few restaurant owners, including Kent Rathbun, owner of Imoto, are hoping to help boost the nightlife action over in Victory Park.

Imoto, a sushi and pan-Asian restaurant, was the first of several restaurants to open in Victory Park, over a year after a revamp of the neighborhood was proposed.

It is Imoto’s sixth day in business at the time of this interview, and so far, Rathbun feels that opening Imoto in Victory Park was a good investment made.

“The people revamping this entire Victory Park district approached us and asked if we’d want to open a restaurant down here,” Rathbun says.  “At first, we were a little bit reluctant about opening here, but the more we heard about what was happening and what was coming and seeing who was signing, we decided that this is where we want to be.”

Rathbun describes the first few days of operation as “eerily phenomenal.”

“I’m not even talking about the size of the crowds, or about the money we’ve pulled in,” Rathbun says, “I’m talking about the performance of our staff, the performance of our kitchen, and the response from our guests.”

Rathburn then emphasizes the importance of starting slow and gradually picking up the pace.

“Right now, it’s not about being packed to the brim, it’s not about bringing in a huge amount of revenue,” Rathbun says, “it’s about creating an environment that everyone likes and in which everyone feels comfortable. I don’t care how good of a restaurant you are; if you start off at 100 miles per hour, you’re going to fall on your face.”

This philosophy can also be tied back to the process of creating and opening the restaurant. It took Rathbun nearly two decades to achieve his desired aesthetic and atmosphere.

“When I first was researching concepts for another restaurant of mine, Abacus, back in 1998, I went to a restaurant called Buddha Bar in Paris, France,” Rathbun says. “It was a restaurant that featured sushi and pan-Asian food. The cool thing about this restaurant is that it had a vibe I would never forget. Ever since, I’ve been trying to recreate that vibe. Abacus came very close, but Abacus was more world cuisine.”

Rathbun, having worked exclusively in the hospitality industry since the young age of 14, can attest to this fact. Despite not having trained in a culinary arts program, he considers himself very to have learned under the mentors he worked with in the early beginnings of his career.

“I have no formal degree in culinary arts,” Rathbun says. “I am sort of just a product of working in really good restaurants with really good chefs. I don’t use the term ‘self-trained’ specifically because I’m not self-trained. I’ve been fortunate to work with fantastic chefs in fantastic restaurants and just pay attention.”

Despite taking immense pride in his work, Rathbun still has his eyes set on the bigger picture.

“Obviously, we want to be successful, but the real bottom line is to be part of bringing this district back to life,” Rathbun says. “If that happens, everyone wins. We’re just a piece of the puzzle here. But if that piece of the puzzle fits and that puzzle eventually turns out to be one of the hottest districts in Dallas, which I think it will be, then we’ve done our job.”

“Kitchen grease keeps you young,” Eric Dreyer of Fearing’s on growing within Dallas’s hospitality industry

On any given night at The Ritz-Carlton’s Fearing’s restaurant, you are bound to see one of Dallas’s most recognizable chefs. Eric Dreyer, Fearing’s Chef de Cuisine, has been working for Dean Fearing’s namesake since its opening in 2007. Since then, Dreyer has received numerous accolades, including Eater’s Dallas’s Hottest Chef award. Dreyer has also raised awareness for various charities and organizations, including the Young Texans Against Cancer. He is also vocal in his support for local farmers and artisans.

With all of these contributions and accolades to Dreyer’s credit, it is clear that he is truly meant to be working in this industry. However, Dreyer almost ended up working in a completely different field.

“I originally majored in computer science,” Dreyer says, “but I later came to realize that sitting at a desk all day wasn’t for me.”

Upon coming to this realization, Dreyer enrolled in the Southern California School of the Arts, a school which would later be bought out by the Cordon Bleu.  From there, he worked in various restaurants and catering companies until, following the advice of one of the chefs for whom he worked, he went to work for the Ritz-Carlton in Marina Del Rey.

“I worked in Jer-Ne at The Ritz-Carlton for about five years,” Dreyer says. “It was named LA’s best fusion restaurant in 2003.”

In between noting all of these time frames, he manages to put dates on himself, to which I reply commenting on Dreyer’s young appearance.

“Well thanks,” Dreyer chuckles in reply. “Kitchen grease keeps you young.”

He then explains how he ended up migrating to Texas from California.

“I went to a tasting at The Mansion at Turtle Creek, where Dean Fearing was working at the time,” Dreyer says. “I interviewed with Dean for the Sous Chef position, and was offered the job, but I didn’t end up taking it.”

Fearing ended up accepting an offer for a Chef de Cuisine position at Grand Hyatt DFW, where he later received the Grand Hyatt Rising Star Award.  He stayed with Grand Hyatt DFW for almost three years, until he learned that Ritz-Carlton was opening a hotel in Dallas.

“I heard Dean would be involved with the Ritz-Carlton’s restaurant, so I decided to interview with him,” Dreyer said. “Luckily, he remembered who I was, and I was offered the job.”

Since 2007, Dreyer has been a part of Dean Fearing’s carefully selected team.

“It’s never been stagnant here at Fearing’s,” Dreyer says. “There have been a lot of different things going on within the restaurant, so it’s managed to keep my interest throughout all of these years.”

Dreyer admits that throughout his time at Fearing’s, his and Fearing’s cooking styles have contrasted, however, he feels that he and Fearing make a great team.

“When I first started, it was very much simple, Asian inspired food,” Dreyer says. “With Dean, it’s very different. Dean has a lot of layers of flavor involved in his recipes. Sometimes you have what’s really simple, but there can be like 10 or 12 ingredients involved.  For me, I like clean, straightforward flavors, but I think our styles balance each other well.”

All accolades, awards, and achievements aside, Dreyer finds joy in the helping guests and colleagues take away the best experience possible.

“One of the best parts about my career is finding people that enjoy the whole experience; the people that come back regularly and converse and ask questions,” Dreyer says. “Seeing cooks that I trained, who had no initial restaurant experience, go on to run their own kitchens is also one of the best things.”

Guests of Fearing’s can always expect the royal treatment. Dreyer’s passion, attention to detail and commitment to top-notch guest service are what set him apart from other Dallas chefs. In Dreyer’s 43 years of life, he has lived out his kitchen dream to the fullest, and he has no plans to slow down anytime soon.

Thompson Family Values: Mark Thompson on Home Security and Pest Control

Providing peace of mind is a full-time job. Mark Thompson, the founder of Smith Thompson Security, gladly accepts this responsibility. In a time when tragedies seem to take place on a daily basis, Thompson emphasizes the value of safety and security.

Mark Thompson started Smith Thompson Security in 1978. Smith Thompson Security is often regarded as a company born out of tragedy.

“My father was killed by a drunk driver,” Thompson says. “Our hometown’s newspaper did a story on our family and said we’d be out of town for the funeral. When we got back from the funeral, we discovered that our house had been robbed.”

The look on his mother’s face upon discovery of the horrific incident was enough to motivate Thompson to take action.

“I will never forget how much this broke my mother’s heart,” Thompson says. “Our family completely understands how violating such an act can be.”

Since that day, Thompson has been committed to providing security to families at a reasonable price.

“Back then, home security systems were expensive,” Thompson says. “Only the wealthy could afford them. We tried to find ways to make them affordable for everyone.”

“Everybody in my family starts off like I did,” Thompson says. “I was crawling around in attics running wiring. My son, Jordan, is in the pest control business, and he’s learning it from the ground up.”

Thompson’s years of hard work and dedication have proven to be fruitful. Smith Thompson Security is currently the official home security system of the Dallas Mavericks.

“On our 30th anniversary, my wife and I came up with this crazy idea to visit all 30 NBA arenas,” Thompson says. “It started off as a joke, then it became a dare, then we actually did it. And then, the following year, we became sponsors after receiving a lot of media attention. We’ve been sponsors ever since.”

Having been heavily involved with the Dallas Mavericks for nearly eight years, Thompson won MFFL award at the final Mavs game of the 2017-2018 season.

Al Biernat’s Introduces Brunch Menu

Earlier this month, Al Biernat’s unveiled their brunch menu and began to share its offerings with the public. For those wanting a luxurious, lavish brunch experience, Al Biernat’s should most definitely be on your food bucket list.

Now, before you make any brunch plans, be prepared to break the bank. The items on Al Biernat’s brunch menu are a bit pricey, however, I can vouch for the fact that the service, quality of the food, and the overall experience is worth every penny.

I arrive at Al Biernat’s on a Sunday morning. Upon arrival, I am quickly greeted and offered a place to hang my coat. The rest of my party has arrived before me, so I am immediately guided to my table.

To kick things off, I order a mimosa. Al Biernat’s mimosa can be described as a glass of champagne with slight touches of orange juice, which, if we’re being honest, is the way to do it. I mean, come on! No one wants to spend $7 on a glass of orange juice, am I right?

Al Biernat’s brunch menu boasts a variety of options for appetizers, including Atlantic Calamari, Lump Crab Cake, and Crab & Corn Chowder. I, however, opt for something light; the Seasonal Fruit.

The Seasonal Fruit is an arrangement of fruits of almost every color of the rainbow. There is a small bowl of raspberry yogurt in the middle of the fruit plate, which complements the already sweet, fresh fruit nicely.

For my main course, I order the Carne Asada with scrambled eggs. The other two people in my party order the Chicken Fried Chicken and the Shrimp & Grits. During the main course, my party and I pass our plates around and allow each other to take a bit off of each others’ plates.

Out of all of the items I sample that morning, I must say, the Shrimp and Grits is my favorite. The grits are warm and have a sweet flavor to them and the shrimp are thick, meaty, and hearty. The shrimp come slathered in Al Biernat’s creole sauce, which is absolutely to die for! The creole sauce packs a perfect punch of sweet, spicy, and tangy. I love it so much that I order the sauce on the side, so I can put it on my eggs and carne asada.

To wrap things up, we order the Brioche French Toast for the table to share. The Brioche French Toast comes topped with caramelized bananas, blackberries, and Chambord cream. The toast is cooked to a fluffy, cake-like consistency. It is a warm mound of pillowy goodness. Plus, the fruit was good and fresh, not mushy and soggy like in other restaurants.

If you’ve got extra money to spend, Al Biernat’s brunch is definitely worth dropping a pretty penny. Be sure to arrive in your best clothes with your favorite people.

How Pazzo Encompasses Everything Dallasites Love About Uptown

When Dallasites head out for a night in Uptown, they are seeking delicious food, good drinks, and/or fun music. Cedar Springs’s newest opening, Pazzo, has managed to combine these three elements to create an Italian dining and lounging experience. Pazzo is the brainchild of Luke Zeutzius, whose mission is to bring an evolving menu designed for the American Italian fusion enthusiast.

Upon arriving at Pazzo’s media and influencer event, I am greeted with smiles from two casually dressed young ladies, who quickly seat me in the proper section. I am first offered water, and once the server returns with a cold glass, I am then asked for my drink order.

To kick things off, I order the Walk of Shame, which consists of Zephyr gin, lemon, and Angostura bitters. It is a tangy, fruity, sour drink, which tastes like lemonade with a hard kick.

I follow the Walk of Shame up with the Straight Skinny, which consists of Código, agave, and lime. It is Pazzo’s version of the margarita and it has a light taste. The agave makes it sweet, but not to the point where it overpowers the tequila and lime. Most house margaritas taste like Slurpees, however, Pazzo’s tastes like a delicious, healthy juice that one could pick up at a Pilates studio; theirs just happens to be kicked up a hard notch.

After drinks, the servers bring out a variety of appetizers, including the White Truffle Garlic Bread, Crispy Polenta Cakes, and Crispy Eggplant. Although all of the appetizers are phenomenal, my personal favorite would have to be the Crispy Polenta Cakes. As a Texan, I love my pork, and Pazzo’s polenta cakes come topped with a sweet, shredded, savory pork shoulder. It is the perfect merging of Italian and Texan culture.

Before the main entree, the servers bring out what’s called The Vinegary One, which is Pazzo’s house salad. The signature dressing nicely complements the greens and vegetables, giving it a salty, lemony taste.

For my main course, I order The Cripsy Piece of the Lasagna, which is a lasagna dish layered with spinach noodles, bolognese sauce, and a combination of fresh and aged cheeses. As its name suggests, the noodles are rather crisp. The bolognese sauce is hot, hearty, and packed with spice and flavor.

To wrap things up, I pick the Chocolate Chip Cookie Panwaffle “Smore” as my dessert. A fun fact about this is that Pazzo’s owner Luke Zeutzius invented and patented the Panwaffle pan, as a result of him and his younger brother arguing about what to eat for breakfast. The Panwaffle Smore is topped with strawberries, chocolate, graham crackers, ice cream, and burnt marshmallow fluff. It is a dessert experience unlike any other, and a must-try for first-time visitors.

After dinner, we are taken to a lounge, in which the walls are lined up with couches. We toast with champagne to celebrate Pazzo’s prosperous future.

I leave Pazzo highly impressed with what I’ve experienced. Pazzo manages to encompass everything Dallasites love about Uptown, from fun, upbeat music, good drinks, and delicious (not to mention, relatively inexpensive) food.

Pazzo will begin serving items from their brunch, lunch, and dinner menus beginning February 2. They will also host a grand opening celebration on February 23.

Legacy Hall is an Artistic Celebration of Food and World Cultures

The most anticipated addition to Plano’s Legacy West shopping center is finally set to open its doors this Wednesday. Legacy Hall is a three-story food hall containing a variety of restaurant set-ups and bars. It is the first of its kind in the United States, inspired by the food halls Jack Gibbons, president of The Frontburner Group, encountered during his international travels.

“My business partner Randy and I were in Russia traveling back through Amsterdam,” Gibbons said. “When we studied the history of food halls and how they started in Europe, we felt that there was a big place for this in the United States.

Legacy Hall’s opening comes shortly after the opening of Legacy West’s Haywire, which is also parented by The Frontburner Group. Like Haywire’s three stories, each floor of Legacy Hall has a different feel to it.

“On the first floor, there are 20 stalls that are serving all different product from shawarma to lobster rolls. Each of the 20 stalls is run by local chefs and restaurateurs,” Gibbons said. “There’s a full working brewery on the third floor.”

This past Saturday evening, media and press were invited to a sneak preview of the much-anticipated food hall. Each of the attendees was given a pre-loaded “hall pass,” containing $25 worth of credits, valid at any of the bars and food stalls.

For dinner, I made my way over to Blist’r and ordered a Char-grilled chicken tikka naan wrap. I was given the option of choosing “regular” or “spicy” and opted for the latter. My wrap was assembled quickly, in the same fashion of a Chipotle burrito.

I was very satisfied with the taste of my naan wrap. While the chicken was hot, spicy, and flavorful, it was the tamarind and mint chutney, along with the pickled onion that gave the wrap a sweet kick. I washed down the wrap with a lemon berry acai flavored Stubborn Soda. The soda tasted different from any other soda I’ve ever tasted, as the sweet fruit flavors overpowered the carbonated water. Originally, I had planned to give up drinking soda in the imminent new year, however, I may have to make an exception for Stubborn.

After dinner, I opted for a healthy dessert at Berrynaked, a stall offering a variety of popsicles, smoothie bowls, and sundaes. I was able to try both the matcha latte and the blueberry lavender popsicle. While both popsicles were refreshing, I preferred the blueberry lavender. The matcha latte was good, however, the dairy base doesn’t allow for the consumer to get to the flavor as quickly as the water base of the blueberry lavender does. As for both popsicles, they were frozen to the right consistency to which they didn’t melt immediately upon removal from the freezer.

To end the night, I paid a visit to the third level bar and ordered a drink called “Teaches and Peaches.” The Teaches and Peaches consists of Peach Brandy, Madeira, lemon juice, raspberries, and billers. Albeit a bit pricey, it was packed with fruity flavor and had a strong impact.

Although I didn’t get a chance to try every single food stall, there were several items that looked very appetizing, including “The Soulman” from Press Waffle Co., as well as handcrafted pizza from Forno Nero.

Apart from offering a multitude of delicious food options, Legacy Hall encourages its guests to be environmentally conscious, as they have different trash containers for paper, plastic, and food waste.

My only complaint of the night was that the first floor felt rather crowded, however, this is likely to change, as more outdoor additions are underway.

In March of 2018, Legacy Hall will open an environmentally friendly music venue right outside of the first floor.

“Our venue will be called ‘The Box Carton,” Gibbons said. “It is made out of recycled shipping containers and has different bars and restaurants that will really complete the food hall project.”

Although the Gibbons and The Frontburner Group have a lot on their hands right now, they have no plans to slow down in the near future.

“We’ve started a company called ‘The Food Hall Company,’” Gibbons said. “We’re starting our Plano hall as our first one, but we plan to create more of these unique venues and make them wildly popular across the country.”

Legacy Hall is an artistic celebration of food and world cultures. There is something for everybody at Legacy Hall and it will undoubtedly be a hit upon opening.
